Armadillo Eggs

I look forward to Super Bowl Sunday every year. No, Not because I am avid football fan but because I LOVE making hors d'oeuvres . Some people love to bake. Some like to smoke or cook. My love is appetizers. I could probably fill an entire cook book on the hors d'oeuvres I enjoy making, but today I will start with the family favorite, Armadillo Eggs.


Large Group of friends

15 large jalapenos

1 stick of Blue & Gold Sausage

1 box of pork flavored Shake N' Bake

2 or more eggs

Shredded Cheese

The night before my party I like to gut and cut the jalapenos, wash good, put in a large bowl filled with water and leave in the fridge over night. The next day I take the jalapenos out of the water and pack with shredded cheese. I then make a sausage ball batter and wrap the jalapenos individually.

I roll into a ball and then roll in an egg wash. From there I roll that in the pork flavored Shake N' Bake. Put on a cookie sheet. Pre-heat your oven to 375 degrees and bake for approximately 20 minutes or until they are golden brown and begin to break open.

I like to pair these with or with out a home made ranch dressing. This will quickly become a party favorite.
