Beef and Cheese Enchiladas

This has always been a dish that I have let my mom make because it always seemed like too much work. Boy was I wrong. When 007 told the crew what was for dinner it wasn't long before we had a house full.


3 lbs hamburger

1/3 chopped onion

2 packages of your choice of taco seasoning

2 cans of Rotel

1 box of Velveta

Made 13 enchiladas.

First I chopped 1/3 of my onion and sauteed it in the bottom of my pan. Then I added the 3 pounds of hamburger, browned and drained it and set aside for later.

Proceeded to make the cheese sauce for the top of the enchiladas when I got the phone call that we would be having guest so I decided to double the batch and add sausage for dip after I used what I needed to top the enchiladas.

On low heat combine your Rotel and Velveta until fully melted. Then turn off heat.

I combined the meat with the taco seasoning. I then proceeded to fill my tortillas with the meat combo and put shredded cheese on top of the meat, wrap tightly and place in the pan, snug as a bug in a rug! Cover with cheese sauce and sprinkle shredded cheese on top. Pop in the over at 300 degrees ( no higher then that because the cheese will melt off) until the cheese is melted and boom, dinner is served!!!!!

I paired this with refried beans, fresh homemade guacamole and cheese dip. If you went to bed hungry it was your own fault.

Total prep time 30 min. Total cook time about 10 min.
